This recipe for Pad Thai is as cheap and easy as it gets. When I discovered this recipe as a poor college student, I was delighted with how easily these four college staples can be combined to make a pretty legit pad thai.
Ingredients
- Chicken flavored ramen noodles
- Chunky peanut butter
- Sriracha
- Dehydrated broccoli (nice, but not necessary)
Instructions
- Cook the ramen noodles as you normally would, but use only as much water as you need to get the noodles soft. Some extra broth is good, but too much will cause the final product to become too soupy. If adding broccoli, boil it with the noodles
- Add 1-2 tbsp chunky peanut butter
- Add sriracha to taste
That’s it! I feel almost stupid making an entire post about this, but it really is one of my favorite recipes and people are always shocked at how good it tastes. Can it compete with the real thing on the streets of Chiang Mai? No. But it’s close enough at the end of a day filled with sunshine and switchbacks.
